Here’s what you need to know: Authentic balsamic is made using just two ingredients; cooked grape must and wine vinegar. The grape must (fresh-pressed grape juice) is slowly cooked down until it's thick and sweet. Wine vinegar is then added to kick off natural fermentation and balance the flavor with just the right touch of acidity.

So while it’s called “balsamic,” seeing wine vinegar on the label is not only normal, it’s essential for creating that rich, complex flavor balsamic fans crave!
